Mini Sausage Meatballs

This recipe has become a bit of a staple in our house because you can make them ahead of time and freeze them (already cooked). They are good in soups and pastas.

Mini Sausage Meatballs

1 lb. ground pork sausage, original flavor
1 egg, beaten
¼ cup Italian style bread crumbs
1 ½ Tbsp. Italian Seasoning
2 Tbsp. grated parmesan cheese

Combine all ingredients with hands in large mixing bowl. Roll into tsp. size meatballs and place on foil lined, greased cookie sheet. Bake at 375 degrees for 10-15 minutes or until meatballs are cooked through but not very brown. Makes approximately 70 mini meatballs for use in a variety of different recipes. Extras can be frozen for up to 3 months.
