Creamy Caprese Pasta Bake


Of all of the fresh summer flavors in all the world the combination of tomatoes and basil is my all time favorite. Did I mention there is nothing more delicious than a sweet sun-ripened tomato hand-picked from your own garden? There is really nothing like it.

Honestly I would say that this pasta is not worth making unless you have garden tomatoes this summer. And, if for some reason you don't have any I am sure you can find a neighbor or ten who are up to their eyeballs in fresh tomatoes... and zucchini... and peas... and summer squash. But I digress.

If you have neighbors without gardens, stop by a farmers market. Trust me, it will be worth it. That brings me to this:

Creamy Caprese Pasta Bake. Clearly the above picture is the pre-baked view. Which I would honestly eat it unbaked too. It'd still be mouthwateringly delicious. Is "mouthwateringly" a word? Oh well.

However, even though I was tempted to shovel the unbaked version into my mouth, I decided to wait the ever so long twenty five minutes of baking. It made the flavors that much deeper. I am glad I waited.

Maybe it is just me, but I also thought that this might be good with a little homemade balsamic vinaigrette drizzled over it to give it a true caprese salad flavor combo.
